“Perdono” (“Forgiveness”), a word whose etymology in Italian is composed of “Per – Dono” (“As a gift”), is our Rosé from Gamay: a Burgundian grape that has found in our vineyards, like our Pinot Noir, an ideal home. A lively and fragrant rosé, with an intense color and aromas that express wild strawberries, raspberries and pomegranate on a bed of cyclamen and pansé.
In the mouth it is soft and balanced, while it flows fresh and satisfying. Excellent structure and persistence, with a refined mineral finish and an intensely fruity return. A “gastronomic” rosé, suitable for a great variety of combinations.

Description

Vinification technique
Manual harvest in crates, with a careful selection in the field in the lowest area of the vineyard. The grapes, once de-stemmed and pressed, are sent by a peristaltic pump in steel tanks where the fermentation takes place with a controlled temperature of maximum 18°C.
Aging technique
6 months in steel tanks before being bottled, without malolactic fermentation.

Alcohol 12,5% vol – Acidity: 5,8 g/l.
